Banana, Chocolate & Coconut Popsicles

Ingredients
  • 2 large, very ripe bananas (peeled and cut in chunks)
  • 1 medjool date (pitted)
  • ½ C unsweetened almond milk
  • ½ tsp vanilla
  • 2 Tbs unsweetened shredded coconut
  • 1 Tbs cocoa powder
  • 4 dixie cups (for storing)
  • 4 popsicle sticks or straws (for storing)
Instructions
  1. Combine bananas, date, almond milk and vanilla in a blender and puree until smooth.
  2. Take the blender container off of the electric base and set it on the counter, then add the coconut and cacao nibs and stir together with a spoon (resist the urge to blend and just stir with the spoon!).
  3. Put 4 dixie cups in a shallow dish, then fill them up with the blended banana mixture (Leave about half an inch at the top of each cup).
  4. Put popsicle sticks or straws into the center of each dixie cup.
  5. Put the popsicles in the freezer to enjoy later!
